Wednesday 1st March: Orazio D'Elia, Da Orazio
Restaurateur and Chef Orazio D’Elia is one of the most exciting talents in the Australian food scene. Born and raised in Naples, Italy, his culinary journey began at home watching his nonna cook. This ignited a fire that would see him develop into the talented, hardworking, and eternally creative Italian chef he is today! Orazio will be bringing his personality, and his ‘simple food, done well’ approach to cooking to this event!

Wednesday 8th March: Andy Evans, Spice Temple
Andy Evans is an accomplished Executive Chef at Spice Temple, a restaurant within the prestigious Rockpool Restaurant Group. Known for his expertise of traditional Chinese and Southeast Asian cuisine, Chef Andy is always experimenting with new techniques and ingredients to push the boundaries of what is possible. He is highly respected by his peers in the culinary world and is considered one of the top chefs in the industry.

Wednesday 15th March: Claire Van Vuuren, Bloodwood
Claire Van Vuuren is the head chef and co-owner of Bloodwood in Newtown. Claire’s food is packed full of flavour, heartfelt and reflects the close connection to her suppliers & producers. She is a mentor, judge, passionate leader and founding board member of Women in Hospitality (WOHO) – an organisation that mentors and supports women in the hospitality industry. This special, one-off dinner will be accompanied by non-alcoholic beverages from P&V Wine + Liquor Merchants.

Wednesday 22nd March: Colin Fassnidge
Born in Dublin, Colin is an Australian Kitchen Nightmares and My Kitchen Rules star and has a string of accolades from Hats to Top 100s for his Sydney restaurants. His most recent venture is The Castlereagh, a bistro in the heart of Sydney CBD, follows previous successes including Banksia Bistro, 4Fourteen (Surry Hills) and The Four in Hand Dining Room (Paddington). During Covid, Colin created a soup kitchen to help venues with left over produce then delved into private dining experiences and online cooking classes!

With a career spanning over 30 years in the Australian food industry, Matt Moran has a plethora of awards to his name, TV shows, best-selling cookbooks, and ownership of some of Australia’s most celebrated dining establishments; it’s safe to say that Matt Moran is an Australian food icon! We’re delighted to be wrapping up our Guest Chef at the Ref series with a delicious and creative food experience curated by Matt.
