Wednesday 9th August: Shimpei Hatanaka, Saké Restaurant & Bar
Born in Japan and raised in Australia, Shimpei Hatanaka has been working in kitchens since the age of 14 and has spent over a decade working with Saké. After cooking alongside his father at Shiki Japanese Restaurant in the Rocks, Shimpei went on to earn his stripes at Sushi-e in Sydney and Nobu Atlantis in the Bahamas. His culinary philosophy is to cook the flavours he enjoys eating, or dishes he has cooked for others, rather than replicating dishes from elsewhere.
Tickets available for $120 per person. Each ticket includes a donation to serve 6 people in need a free, nourishing meal during our weekday service.


Wednesday 16th August: Julian Cincotta, Butter
Restaurateur and Chef Julian Cincotta discovered his passion for food and cooking at his parents’ café at just 15 years of age! He honed his skills under Chef Neil Perry at Rockpool, before moving to Nomad as Sous Chef. In 2015 Julian was awarded the prestigious Josephine Pignolet Young Chef of the Year award in the SMH Good Food Guide. Julian is passionate about sustainability within the hospitality industry and has implemented a number of sustainable initiatives at his restaurant Butter.

Wednesday 23rd August: Trisha Greentree, Fratelli Paradiso
Trisha Greentree lives and breathes hospitality. As executive Chef of cult Sydney restaurants 10 William St and Fratelli Paradiso, Greentree celebrates the simplicity of high-quality ingredients, done well.
With a focus on sustainability and thoughtful farming practices, Trisha has a produce-focused approach to cooking at community-driven venues where simplicity, seasonality and creativity are the order of the day.

Wednesday 30th August: Amanda Fuller, Mejico
Amanda Fuller is an internationally recognised chef, having gained notable recognition within the industry during a decade of service in London. Passion and diligence for the profession have been the driving focuses for Amanda since a young age. She has gone to great lengths to gain valuable experience since graduating from Ryde, including cooking with Indigenous Australian flavours in Uluru and gaining a deep respect for seasonal ingredients during her time in Tasmania. Every day in the kitchen is creative, working with supplier partners and looking at sustainable cooking practises.
